Healthy Breakfast Cookie Recipe
Ingredients:
- 2 cups old-fashioned oats
- 1 cup almond flour or whole wheat flour
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup almond butter or peanut butter
- ⅓ cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract

- ½ cup dried fruit (e.g., raisins, cranberries, or chopped dates)
Instructions:
- Preheat & Prep: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine oats, almond flour, baking powder, cinnamon, and salt.
- Combine Wet Ingredients: In a separate bowl, mix almond butter, honey (or maple syrup), eggs, and vanilla extract until smooth.
- Combine: Pour the wet ingredients into the dry ingredients and mix until fully combined. Stir in the nuts, seeds, and dried fruit.
