This recipe is easy to make and delivers perfectly spiced cookies with a chewy texture, thanks to the combination of oats and raisins. You can also customize them by adding chopped nuts or swapping raisins for other dried fruits.

Oatmeal Raisin Cookie Recipe

Ingredients:

  • 1 ½ cups old-fashioned oats
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup raisins

Instructions:

  1. Preheat & Prep: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  3. Cream Butter & Sugars: In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Combine: Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the raisins.
  5. Shape: Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet. Flatten slightly with your hand.
  6. Bake: Bake for 10-12 minutes, or until the edges are golden but the centers are still soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
